As for a wine pairing with this slightly spicy and super-flavourful dish, I often pick a fruity red wine like a Côte du Rhone or even a Beaujolais Nouveau – and chill it slightly before serving. I’ve found that a sparkling rosé works too. Choose one that’s not bone dry and that hint of sweetness will match perfectly with the spice of the harissa.
