Fresh ripe peaches taste like summer in one big satisfying juicy bite. We’re big fans at my home and I look forward to baking, cooking and cocktailing with them.
I’ve been experimenting with peach cocktails lately using fresh Ontario peaches and have landed on a delightful Frozen Peach Bellini. You could also call it a Peach Bellini Slushie which might sound more fun if you’re whipping this up for a picnic or for cottage cocktail hour. It’s super-refreshing and light so is well suited for brunch or afternoon cocktails in sun. Try my easy recipe below and let me know what you think of this oh-so-pretty blended cocktail. I’ve added a splash of grenadine to enhance the drink’s rosy glow and garnished with a sprig of thyme because, well, that’s what I do. Plus it makes the cocktail an occasion!
Another favourite use of mine for fresh peaches is to bake with them. They’re delicious in a Peach Crisp or Peach Crumble and also in a Peach Upside-Down Cake. All are quick desserts to whip up so ideal when you’d rather be outside in the garden with that aforementioned cocktail.
My upside-down cake recipe truly delivers: moist fluffy cake topped with glossy, caramelised peaches. Enjoy warm from the oven with a scoop of quality vanilla ice-cream or take it to the next level with a side sipper of chilled Ontario icewine. Such a wonderful indulgence justifiable for every day – or at least a special weekend dinner.
My recipe is from an old classic: The Kate Aitken’s Canadian Cook Book. The book was a go-to of my mother’s when I was growing up and it’s full of simple trustworthy recipes. A good one to have in your cookbook library – and you might just get a kick out of the “note to brides” suggestions sprinkled throughout the 1945 volume.
Frozen Peach Bellini Cocktail Recipe
3 fresh peaches, sliced or chopped
1 cup ice cubes
Splash of grenadine
1 tbsp sugar
1 cup sparkling wine
Fresh thyme for garnish (optional)
Combine peaches, ice, grenadine and sugar and blend until puréed. Top with sparkling wine and pulse lightly until combined. Pour into glass and garnish with herb sprig. Now take that cocktail and head into the sunshine!
